Parking At The Port 
Parking at the port is a pretty standard (among ports) ten bucks a day, in advance, cash or credit card. If you end up going that way I'd be sure you  drop off your people and luggage first, then go park the car. 
 
If you'd like to save some money and are not really worried about leaving your vehicle in a semi-secure but no guarantees parking area I'd check with one of the hotels that offer shuttle service to and from the port.  You may need to be a guest to be able to leave your car behind while you cruise but you may not.  The Raddison might do it. They do have shuttles that you sign up for to transport you to the port on embarkation day. On the day of debarkation you will find the shuttles outside running back and forth. The wait will depend on the number of people waiting to catch it back to the hotel.

 
To tell you the truth, though, the port really is your best bet IF you are simply driving in and NOT doing a pre-cruise hotel stay.
 More Than A Port 
The Cove at Port Canaveral is a waterfront recreational area. It is home to a variety of restaurants, shops, charter boats and attractions. Throughout the port, several restaurants and eateries provide a range of menu choices from finger foods to ice cream to full-course dinners. Seafood is a specialty with the day's catch going directly from the deck of the fishing boat to the restaurant kitchen.
